The old capital of Languedoc, Toulouse is a city with a distinguished historical past, but also a bright future. It's known as 'La Ville Rose' (The Pink City) due to the terra-cotta bricks used in many of its buildings. The heart of it all is the Place du Capitole, a lovely square that's presided over by a magnificent town hall of the same name. Its 17th-century Canal du Midi links the Garonne River to the Mediterranean Sea, and can be traveled by boat, bike or on foot, which is especially romantic by night, when the Pont Neuf is floodlit.
